Whiskey Sour

Ingredients:

1 part lemon juice

1 part simple syrup

1 part egg white

2 parts whiskey of your choice


Technique:

1. Add lemon juice, simple syrup, egg white, and whiskey to mixing glass.

2. Dry shake with no ice until frothy

3. Add ice and shake until chilled

4. Strain down the side of the glass to preserve the foam

5. Garnish with bitters on the foam, lemon wheel, or cherry


Substitutions and Additions:

1. Lemon Juice- The acidity of the lemon juice is crucial t the foam formation, so while any fruit juice or fruity vinegar would work, at least half of the 1 part of juice needs to be lemon.

2. Simple Syrup- any sweetener could work here as long as it is miscible in water (e.g. honey syrup, maple syrup, demerara syrup, corn syrup, sorghum syrup, molasses syrup, or stevia syrup). any marmalade would be a welcome swap for a fruity twist.

3. Egg white - If you're weary of egg whites, aqua fava (the liquid in canned chick peas) is a fantastic substitute (and it's vegan). The egg white can be omitted all together and you'll still find yourself with a delicious libation.

4. Whiskey- feel free to substitute your favorite 80 proof or higher spirit or hard liquor.

Variations:

1. New York Sour- add a float of red wine

2. Ward 8- replace half the lemon juice with orange juice and use grenadine instead of simple syrup
